These pancakes were perfect, simple & fluffy. They paired perfectly
with a dab of peanut butter and a little syrup.
Basic Pancakes
adapted from How to Cook Everything
2 cups all-purpose flour
1 tbsp baking powder*
1/2 tsp salt
1 tbsp sugar
1 or 2 eggs
1 cup milk
2 tbsp melted and cooled butter
Melt the butter in a small bowl and set to cool. Combine the dry ingredients in a large bowl. In a separate bowl beat the eggs into 1 cup of milk, the stir in the melted butter. Gently mix this into the dry ingredients, mixing only enough to moisten the flour (batter will be lumpy). If the batter seems to thick, add a little more milk.
If your skillet or griddle is non-stick, you can cook the pancakes without any butter. Otherwise, use a teaspoon or two of butter or oil each time you add batter. Adjust the heat as needed (usually between medium and medium-high. The idea is to brown the bottom without burning it, flip and cook on the other side (usually between 2-4 minutes). Enjoy!
*no baking powder? mix 2 parts cream of tartar with 1 part baking soda
